It says a number of times in the Torah itself, "You shall guard My statutes," "You shall go to to the judge in your day, " or "Go to the priest in your day." "You shall not turn right nor left from what the elders tell you." [From memory. Not exact quotes.]
This means the Torah was given to us, to understand it and to understand what G-d wants from it.
We have guidelines. Rules for analysis. There are things we can do and things we can't do.
We have our Oral Tradition with much of what comes between the lines and behind the words.
And what should be most obvious to anyone, only the people who show themselves to have committed the entirety of their lives to Torah study, those men are the ones the masses gather around for direction and instruction.
It is easy enough to hear, however, [and this was precisely your concern!] how any ignoramus can come along and say, "Well, if that 'guy' gets to say what to do, I MYSELF also get to say what to do."
