In Judaism, are men and women considered equals? I have recently come face to face with a group xians that believe that only men can teach the "word".

Men and women are equal but have different roles to play. Actually, women are considered a wee bit superior to men. In Judaism different people have different responsibilities:

1. kings only come from Judah
2. priests only come from Levi
3. women are responsible for Shabbat

and so on.

Is there a website that I can go to that lists the different laws as set forth that are observed in Judaism?

"Law" is not a very good translation of mitzvah, but try the Ask Moses website list of the 613 mitzvot. Link.

Are the holidays that are observed in Judaism all bibically based? Or are there traditions that set outside of the religion area (for example New Year's Eve/Day)?

Most holidays are biblically based. We just passed Rosh HaShanna and Yom Kippur. This week is Sukkot (the Festival of the Booths). All biblical. We do celebrate a few that are not biblical. Purim (Queen Esther), Channukah (the Maccabbees and the miracle of the Temple), Tish B' Av. . .
