Keep in mind Lady Felix that we Gentiles are bound to Seven Noahide Laws and can eat, by choice, those animals that are unclean in Judaism. Of course anyone in their right mind won't eat road kill. Unclean does not mean unhealthy. Like professor Mordochai wrote: The Jewish food laws have nothing to do with health; if they did have, why for example should eating pig-meat be unhealthy just for Jews? Because countless millions of non-Jews eat it day in, day out with absolutely no ill-effects what so ever. Eating pig has been done for thousands of years in most cultures on Earth with no ill effects. I would assume that what is eaten has to do with ritual purity under Judaism and eating the wrong meats can make a Jew ritually unclean. They are laws that have to be observed under Judaism because G-d gave them those Laws. That is how I understand the difference.
