We count off the 49 days starting from the 2nd day of Pĕsaḥ—when the first 'omĕr (a measure equal to one-tenth of an eifah or about 2·8 litres) of the spring barley-harvest was “waved” over the altar as a t'nufah offering (Vayikra 23:10-11) for one reason only: because we were told to (ibid., v.15 and D'varim 16:9). It has absolutely no connection with “God’s harvest” (whatever that is supposed to mean), and we don’t link Shavu'ot (which occurs on the 50th day) to the messianic era either.
