But back here on earth, it's not so dramatic. In the 11-ish hour flight between East coast and Israel you pass thru 7 hours of time zone change.

So say an 8am departure from NY, Shacharis you should pray before getting on the plane. At a sunrise minyan or at the airport.
6 hours later, 2pm on your NY watch, you're finishing crossing the Atlantic, maybe not yet over England, which is 5 hours ahead. So local time is the 6+5= 11 hours after departure. 7pm.
Definitely time for Mincha in the summer.
Winter, you probably would want to daven even 2-3 hours earlier. Since you are in the air, you will still see sun when it is getting dark on the ground.

You want to go with the ground times where the plane is!

That's the general rule which I probably should have stated up front.

When you hit Israel, 10 hours later, 6 pm on the NY watch, it will be 1 am local time.
If your going to Jerusalem or Bnei Brak you can still catch a minyan.
Otherwise, davening late, at home, is still probably better than davening on the plane.

The opposite direction [west] is easier because with a 12 hour flight, minus the 7 hours time change, only 5 hours pass, so to speak. So a TLV-NY flight that leaves midnight, 1 am, you've davened Maariv already and you will land 5-6 am local time which is plenty time to catch a morning service.
A 4 pm flight will land in NY 9 pm local time.
You can not have to pray at all on the plane, heading west.

Obviously, longer flights would require one so based on what I said, you can figure it out.

I checked a great website, myzmanim.com, [which means "mytimes"] which lists local praying times almost anywhere in the world. They just added a "FLIGHT TIMES" feature for this very reason!!!
